Sausage and potato casserole

Ingredients

  • 8 Italian sausages (or your choice of flavour), cut in three
  • 4 garlic cloves, chopped
  • 3 potatoes, peeled and cut into chunks
  • 2 carrots, peeled and cut into chunks
  • 540 mL (1 can) stewed tomatoes
  • 60 mL (1/4 cup) tomato paste
  • 375 mL (1 1/2 cups) CANTON™ Beef-Onion Broth
  • 45 mL (3 Tbsp) flour
  • 45 mL (3 Tbsp) butter

Preparation

  • Place sausages in a crockpot; add garlic, potatoes, carrots and stewed tomatoes.
  • In a bowl, whisk together tomato paste and broth, then mix into crockpot.
  • Cover and simmer on low for 6 hours.
  • In a bowl, blend together butter and flour until smooth; set aside.
  • After 6 hours, remove crockpot cover. With a spoon, lightly push apart sausages and vegetables to add butter-flour mixture to broth; with a whisk, blend in.
  • Cover again and continue cooking for 15 minutes.
