Mildly-spiced lentil, orzo and chickpea stew (Vegetarian)

Ingredients
15 mL (1 tbsp) vegetable oil
1 big onion, chopped
500 mL (2 cups) celery, in 1 cm (½ in) chunks
5 mL (1 tsp) turmeric
5 mL (1 tsp) ground coriander
2 mL (½ tsp) ground nutmeg
2 mL (½ tsp) ground cinnamon
1 container Canton À la forestière Broth
1 can (540 mL) brown lentils, drained and well rinsed
1 can (540 mL) chickpeas, drained and well rinsed
5 dried dates, cut in pieces
375 mL (1 ½ cups) cold water
Preparation
In a large skillet over medium-high heat, pour oil, then brown onion and celery 1 minute. Add turmeric, coriander, nutmeg and cinnamon, then cook another minute.
Pour 250 mL (1 cup) Canton broth in skillet and mix well to blend in spices. Pour everything into crockpot.
With the exception of the orzo, add remaining ingredients to the crockpot.
