Mildly-spiced lentil, orzo and chickpea stew (Vegetarian)

Ingredients

  • 15 mL (1 tbsp) vegetable oil
  • 1 big onion, chopped
  • 500 mL (2 cups) celery, in 1 cm (½ in) chunks
  • 5 mL (1 tsp) turmeric
  • 5 mL (1 tsp) ground coriander
  • 2 mL (½ tsp) ground nutmeg
  • 2 mL (½ tsp) ground cinnamon
  • 1 container Canton À la forestière Broth
  • 1 can (540 mL) brown lentils, drained and well rinsed
  • 1 can (540 mL) chickpeas, drained and well rinsed
  • 5 dried dates, cut in pieces
  • 375 mL (1 ½ cups) cold water

Preparation

  • In a large skillet over medium-high heat, pour oil, then brown onion and celery 1 minute. Add turmeric, coriander, nutmeg and cinnamon, then cook another minute.
  • Pour 250 mL (1 cup) Canton broth in skillet and mix well to blend in spices. Pour everything into crockpot.
  • With the exception of the orzo, add remaining ingredients to the crockpot.
  • Set crockpot on Medium and cook 4 hours.
  • Once done, add orzo and let stand 15 minutes.
  • Serve.
